Fresh Apple Cake 2 cups chopped apples (don't peel) or rhubarb Mix with 1 cup sugar (less if using apples) Mix in: 1 egg 3/8 cup oil + water to make 1/2 cup 1 tsp. vanilla Combine and add to above mixture: 1 1/2 cups flour 1/4 tsp. salt 1 tsp. soda 1/2 tsp. cinnamon 1/2 tsp. allspice Add: 1/2 cup chopped walnuts (if rhubarb) or 1/2 cup raisins (if apples) Grease and flour 9" square pan If you double the recipe, do NOT bake it in a 9x13 pan or the middle will be doughy - bake it in two separate pans. Bake at 350 for 35-45 minutes (it takes 40 minutes in our oven) I often turn the oven off and let the cake cool in the oven to make it crispier around the edges.
