I cut the salt way back and moved the scallions from the salad to the dressing to avoid having to slice them super thin - this way the blender does the hard work, and the dressing is awesome. This amount of dressing will cover the salad vegetables but only just. Dressing 5 tablespoons crema 2 tablespoons yogurt zest and juice of 1 lime 1/4 teaspoon salt 1 fresh jalapeno, stemmed then minced seeds and all 1 clove garlic (or 1/3rd of a cube of frozen chopped garlic) small handful cilantro, chopped 3-4 scallions, thinly sliced If slightly more dressing is needed, add 3 tablespoons yogurt more garlic and salt to taste, a little at a time Garnish crumbled cotija cheese Salad 3 large ripe avocados, pitted and cut into chunks 1 large English cucumber cut into chunks (don't peel or remove seeds) Combine the avocado and cucumber in a large bowl. Add the crema, yogurt, lime juice and zest, garlic, jalapeņo, cilantro, scallions and salt to a blender. Blend until there are no more large chunks of green onion. Pour the dressing over the avocado and cucumber salad and toss to combine. Adjust seasoning, sprinkle with cotija, and serve immediately.
