Frijoles Negro Cubano Cuban Style Black Beans For each pound of black beans 2 green bell peppers 2 medium onions 4-6 cloves garlic 2 bay leaves (optional) bacon, sausage, chorizo or other meat, maybe 1 lb, diced 1 teaspoon cumin 1/2 cup cooking wine salt & pepper to taste PRESSURE COOKER METHOD add dry beans to pressure cooker along with water to cover by 2 fingers 1/2 green pepper, stems seeds & ribs removed, in 1 piece (OPTIONAL) 1/2 peeled onion (NOTE: can puree beforehand) (OPTIONAL) Put pressure cooker on high heat without the weight and heat until steam is emitted. Put the weight on. Wait a few minutes for the cooker to come up to temp and then turn down to low heat and set timer for 24 minutes. SOFRITO Clean and chop the bell peppers, onion and garlic. Saute meat in cook pot, then remove, leaving fragrant fat in pan. Saute onion & pepper until soft, then add garlic. When the beans are done cooking, remove them to cool until the top can safely be removed. When the top comes off, mash the cooked green pepper and onion food mill style to get as much cooked veggie mush as possible into the beans. Add a bit more water to the beans if needed. Add remaining ingredients, bring to a slow simmer and simmer for 30-45 minutes. Serve with rice. Also really, really good with poached eggs!
