Carne en su Jugo 2 lbs beef steak sliced thin 22 oz. bacon 5 tomatillos 1 chile serrano 1 bunch cilantro, divided 2 cloves garlic (1/2 small frozen cube) 1/4 small white onion 6 large spring onions (or a bunch of green onions) 1/2 teaspoon whole cumin seeds 1 teaspoon oregano 1 teaspoon black pepper 2 tablespoons of chicken bouillon powdered bulk kind beans chopped cilantro and onion avocado clean tomatillos and serranos then put in pot with 2 cups water cook until tomatillos turn pale then put all into blender (she uses Ninja) along with half the cilantro, the garlic cloves, the onion quarter, the cumin and oregano and black pepper and bouillon and half the water and blend cut off half of the green/spring onions. Remove outer layer and wash. dice bacon into about 1" pieces trim and cut up steak if not done already season meat with salt and pepper heat skillet on medium until hot add bacon and cook for 14 minutes or until it's completely fried remove bacon to pile of paper towels in colander to drain leave all the bacon fat in the pan add onion and cook 5-10 minutes until fully cooked remove and drain the onions pour off bacon fat add 2 tablespoons back into pan cook the meat 4 minutes or until it is browned then add sauce from blender rinse blender jar with remaining water then mix into meat very thoroughly then cover it and put it on the lowest possible heat and simmer 15 minutes then stir and taste it for salt if it needs more salt add chicken bouillon you can add the bacon to the pan or add it at serving time (crisp) add the spring onion, put the top on and simmer another 5 minutes serve in large bowl spoonful of beans including bean liquid needed to cut the heat then add meat mixture including some cooked onion condiments a lot of bacon some minced white onion and cilantro chunks of avocado squeeze on lime juice serve with corn tortillas Make the beans ahead of time. Season the meat with salt & pepper ahead of time make the salsa ahead of time prep the bacon ahead of time prep the green/spring onions ahead of time the rest takes 45-55 minutes while things are simmering chop cilantro and white onion and avocado and heat some corn tortillas between moist paper towels
