Cauliflower in Cheese Sauce My mom used to make something like this. It's basic Midwestern comfort food. 1 medium head cauliflower about 1/2 pound grated cheeses (cheddar, mozzarella, parmesan, etc.) 3 tablespoons butter 3 tablespoons flour 1-1/2 cups milk pinch of freshly grated nutmeg salt & pepper Steam cauliflower pieces until tender Preheat oven to 350F Make the cheese sauce: Melt the butter in a saucepan. Add the flour and whisk to make a roux. Slowly add the milk, whisking to remove any lumps. Continue whisking until sauce thickens. Add nutmeg, salt, and pepper (cayenne optional) Stir in the cheese a bit at a time to desired "cheesiness" Place steamed cauliflower in an oiled casserole with a lid and pour the cheese sauce over the top to cover. Leave lots of headroom! Bake for 30 minutes Note: The ratio for a basic white sauce is: 2 tablespoons butter 2 tablespoons all-purpose flour 1 cup milk
