Debby Erwin's Date-Nut Bread This recipe was Debby's mother's, meaning it dates from around the turn of the twentieth century. Debby Erwin was married to Art Erwin, first cousin to Grant W. Erwin Jr. who was today's Grant Erwin's father. Date Mixture 1 cup pitted dates*, cut in half (160 gm, 5-6 oz) 1 tablespoon baking soda 1 cup boiling water Put the chopped dates into a 2 cup measure or small bowl. Pour the boiling water over and add the baking soda and stir. Let stand at least 20 minutes or until they cool to room temperature. Batter 1 cup sugar (can use half Splenda) 3 tablespoons butter 1 egg 1-1/2 cups flour 1/2 cup walnuts, coarsely chopped (60 gm, 2 oz) Preheat the oven to 350°. Butter and flour two small loaf pans. Cream the butter and sugar together. Beat the egg and add it. Also add the flour and nuts. Fold in the date mixture. Distribute the batter among the pans and bake 40 minutes.
