Green Beans - the French Way 5 minutes intensely boiling uncovered pick out the biggest bean and taste it .. should be barely crunchy then hold a colander on top of the pan, dump hot water out, fill pan with cold water to refresh the beans. Just before dinner, heat a pan and put the beans in and toss them to dry the water all off of them. Add: butter 2-3 tablespoons salt & pepper keep tossing & shaking lemon juice (half a small lemon, 1/4 large lemon) keep shaking taste them, be sure there's enough salt then when they're thoroughly heated, add a little parsley & sprinkle a little more on just before you serve voila
