Italian sausage soup 1 1/2 pounds mild Italian sausage, crumbled 2 cloves garlic, minced 2 large onions, chopped 1 can (28oz) pear shaped tomatoes 3 cans {14oz) beef broth 1 1/2 cups dry red wine 1/2 teaspoon basil 3 tablespoons chropped parsley 1 medium green pepper, chopped 2 medium zucchini, sliced l/4" thick 3 cups bow-tie noodles, uncooked (TOO MUCH, try 2 cups) Grated Parmesan cheese Cook sausages over medium heat till browned. Drain off and discard any fat. Add garlic and onions, cook, stirring till limp. Stir in tomatoes, include liquid, and break into pieces. Add wine, broth and basil. Simmer uncovered for 30 min. Add parsley, pepper, zucchini and noodles and simmer, covered, for about 25 min or till noodles are done. Sprinkle individual servings with cheese. Serves 4-6
