Sloppy Jack Serves two. One of our most beloved camping dinners. 3 eggs 1/4 pound grated cheddar cheese 1/2 onion 3 small potatoes or equivalent 1/3 pound sausage oil oregano granulated garlic salt pepper Peel and dice the potatoes and set them to steaming. Chop the onion. If the sausage isn't bulk, chop it too. Mix eggs and cheese to form 1 scant cup. Scramble, adding garlic and pepper. When the potatoes are steamed enough, drain them and start them frying in skillet. About halfway through cooking them, add the onion and sausage, Fry until cooked. Pull to one side of pan and then add the egg/cheese mixture. While the potatoes are steaming, saute the onion in oil then remove to a plate. Brown the sausage and add to plate. Drain the potatoes then fry them to golden brown, seasoning with salt and oregano. Remove them to the plate as well. Scramble the egg/cheese mixture, season with garlic, pepper. Pull the eggs to one side of the skillet and place onions, potatoes, and sausage on other side to warm through. Serve with ketchup.
