Quesa-Huevos (Quesadilla + Huevos Rancheros) A grilled bean/cheese quesadilla with a fried egg added 2 tortillas 1/2 can refried beans 1/4 pound shredded cheese 3 eggs 1 cup mild salsa 1/4 - 1/3 cup sour cream/yogurt mix butter or oil Make these one at a time. Method 1 Mix beans with shredded cheese and spread onto half of a tortilla. Fold the tortilla in half, place in skillet (dry) over medium heat. Flip as needed to prevent scorching. When the beans are warmed through and the cheese is melted, remove to plate. Remove to plate. Add a small amount of butter and fry an egg. Add the fried egg to the quesadilla either on top or inside, your preference. (This method yields a quesadilla-looking meal.) Serve with salsa and sour cream/yogurt mix. Method 2 Tear tortilla into bite-size pieces and put in a bowl. Add beans, cheese and salsa and stir to combine. Dump into skillet and cook until warmed through. Dump back into bowl, wipe out skillet, add butter and fry an egg. Top the bowl with the fried egg and some sour cream. (This meal may be easier to eat and also warmer, since you don't cool it down with a bunch of cold salsa.)
