Veggie/Vegan Cottage Pie This is delicious!! 1 large or 2 medium potatoes milk or substitute (optional) 3/4 lb. mushrooms of one or more varieties 1 onion 2 carrots 1 bunch kale or other greens 1 clove garlic 2 tsp thyme 1 cup broth (or water) 1 Tbsp cornstarch soy sauce Bakes at 350 for 25 minutes Boil and mash potatoes (add salt plus milk, substitute, butter, or oil if desired) Chop mushrooms, onions, and carrots (smaller is better) and saute in oil for 8-10 minutes until tender Add garlic and chopped kale or greens and saute until greens are tender Add broth or water to pan and bring to a boil Mix cornstarch with a few tablespoons of water to dissolve and add to pan Simmer and stir until broth thickens Season to taste with soy and black pepper Pour veggies into pie plate and top with mashed potatoes Bake at 350 for 20-25 minutes until potatoes look a bit golden
